Pumpkin Spice Crumb Cake-Bread :)

Morning all! Today Martin is out of town with two of my brothers (who live locally with my parents) for a bagpipe gig, and yours truly is home with the kiddos plugging away at chores and making fall treats! The cooking of said treats reminded me that I've been wanting to get this recipe for my new favorite pumpkin cake bread on here so you can try it out, and fall in love:)
Think moist, cinnamon-y chocolate-y pumpkin cake, with a sweet and crunchy coffeecake-esc crumb topping, but only in a bread pan so we don't feel so guilty. Because bread is so less bad for you then cake, isn't it? haha whatever lets just call it what it is: Cake in a bread pan!
Em's Pumpkin Spice Crumb Cake
8 small or 2 large loaves
Ingredients:

Cake:
- 3 1/3 cup flour
- 2 cups white sugar
- 1 cup dark brown sugar
- 3 tsp cinnamon
- 2 tsp baking soda
- 1 1/2 tsp nutmeg
- 1 teaspoon ground cloves
- 1/4 tsp salt

- 2 1/4 cups canned pumpkin
- 1 stick melted butter
- 4 eggs
- 2 tsp vanilla
- 2 cups chocolate chips
- nuts or raisins if desired

Crumb Topping:
- 2/3 cup flour
- 1 1/2 cup dark brown sugar
- 1/2 cup melted butter
- 1/2 tsp each of cinnamon, nutmeg, and ground cloves.

Method: 
Step #1: Preheat your oven to 350 degrees. Sift all dry ingredients together in a bowl to prevent lumps in the batter.
Step #2: Combine your pumpkin, butter, vanilla, and eggs together in a separate mixing bowl, then slowly add in the dry to the wet while mixing until just blended. Ad in chocolate chips. do it:) and mix till evenly distributed throughout batter.
Step #3: separate your batter evenly into whatever *greased* pans you choose to use. I'm giving (most of) these away so I'm using small baking pans, but like it says, you can make two loaf sized breads if you wish:) or heck, use a friggin cake pan and be done with the lies!:)
Step #4: Add strusel topping, and bake for 35-40 minutes, or until knife comes out *mostly* clean:) Don't wait for a super clean knife or your cake-bread will be too dry, and dry is not a good thing for cake. I would check every 5 minutes or so after the first 25 minutes to make sure you don't over-bake.
Step #5: Dive in and enjoy! (with milk) You can thank me now if you want... or later is ok too:)
Give it a try peeps! Our house smelled like sweet fall spice for like three days after I made these!! I'll probably cook this every week or so for the rest of the cold weather seasons so if you want some, feel free to just drop by for a snack!

  16. I love this recipe and make it at least once a month year round. I generally give it to my kids for breakfast or a snack to bring to school and they love it.
