Em's Perfect Cinnamon Raisin Rolls

Trust me, they are perfect. Oh and Did I mention that they're %100 Whole Wheat?!? Not that dense, bland, thick, crumbly whole wheat though, I'm talking about rich, chewy, and moist whole wheat. Don't get me wrong, just one of these babies will certainly fill you up, but you'll realize that its for the best or you'd probably eat the whole pan in one sitting.
I know it may be a little warm outside to think of making cinnamon rolls, but with all the windy april showers we're still dealing with early may, it seemed appropriate to say one last warm and cozy goodbye to chilly wool sock weather by passing on this family favorite. So here you have it!
Em's Perfect Cinnamon Raisin Rolls
Yield: 8 large or 12 small rolls. Preheat at 400 degrees. 


Ingredients for dough: 
  1. 2 T. yeast
  2. 1/4 cup white sugar
  3. 5 cups fine whole wheat flour (hard white wheat)
  4. 5 T. wheat gluten
  5. 2 tsp. salt
  6. 1/3 cups instant powdered milk (or 1/4 cup non-instant)
  7. 1/4 cup olive oil
  8. 2 tsp. lecithin granules
  9. 2 tsp. vinegar or lemon juice
  10. 1 egg 
  11. 2 cups hot water
Method:
1. Add ingredients 1-6 in a mixing bowl and stir lightly to combine. When measuring out your flour first add 1 tablespoon of the gluten to each cup before measuring in the flour, and do so by adding spoonfuls of the flour to the measuring cup till it's filled. This will help it not pack into the measuring cup and cause density in your yummy rolls!
 2. Add ingredients 7-10 to a liquid measuring cup and whisk to combine well. Make a well in the center of your dry ingredients and ad your 'wet' mixture to the center. Add the 2 cups of hot water to your now empty glass measuring cup and add to the center aswell. Use a wooden spoon to pull from the outside to the center combining everything together as you stir. When your dough starts to combine well, proceed with your hands (rings removed please:)) again pulling from the outside and pressing down in the center. Flip your big wad of cough over and cover the bowl with a towel to keep it warm while it rises.
Ingredients for Filling:
  • 1 cup dark (not light, dark) brown sugar
  • 3/4 cup flour
  • 1 T. cinnamon
  • 2 tsp. nutmeg.
  • 3/4 cup butter softened (1 1/2 cubes)
  • dash of salt
  • raisins or currents (around a cup)
3. Cut at your raisins a bit with a knife to open them up, than cover them in a bowl of water to get them really moist and soft (if not they will suck the life out of your moist cinnamon rolls!). Use a pastry cutter to combine your ingredients into a crumble of sorts (raisins excluded so you can add them evenly before rolling.) Roll out your dough (it should have doubled by now) into a large rectangle of sorts and add about 2/3 of your crumble and raisins right on top!
 4. Roll up your dough into a long tube or jellyroll if you will, by carefully turning over the edge, and letting your hands slowly push and tuck along the whole length of the roll. Once its all rolled up, turn it over again and pinch the edges to seal it all together.
 5. Use a piece of floss (you should all have floss in your house.haha) to slide it under the loaf and bring it to the middle. Cris-cross the pieces and pull to cut a clean slice right through the center of your roll. Proceed to cut each of your two chunks in half the same way, making four even quarters. At this point you can decide if you'd like eight large rolls (by cutting all four quarters in half), or twelve small rolls (by cutting the four quarters into even thirds).
 6. As you slice up your rolls, start to stack them neatly side by side in your pan (they'll fill in the cracks as they rise in the hot oven so keep that in mind.), pressing them down a little with your palm to seal in all that good filling, and to give them even tops.  Take the last 1/3 or your topping and sprinkle it directly on top and in-between your rolls to give them a terrifically sweet glaze while cooking. 
Bake in your oven for about 20 minutes or until they're a nice golden brown. While they're baking, mix up your glaze:
Em's Vanilla Glaze
  • 1 heaping cup of powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • 1/4 cup heavy cream
  • 2 1/2 tablespoons milk
Add sugar to bowl and stir in heavy cream and vanilla until mixture resembles a thick batter. Add milk a little at a time, stirring until smooth – about 3-5 full minutes. Your mixture may look a little lumpy at first, but just continue to mix slowly and it will come together nice and smooth.And you're all done!! Serve your rolls right out of the oven, smothering with your glaze, and listen to all the "Mmmm's of appreciation from your friends and family. You're welcome:) Don't worry about buying bigger pants because these babies are %100 Whole Wheat remember?! haha
