Jamie's Sticky Saucepan Carrots

Hey guys! Lots of rushing around here this week (not like that's anything new) but I really wanted to jump on here and share a recipe for the most amazing side-dish that was an immediate favorite the first time Martin made it for me, and its the only way I'll eat cooked carrots to this day!
I haven't posted many side dishes on here, simply because not a whole lot that are amazing enough on their own to warrant their own post, but these are! It's Jamie Olivers recipe, and they are so caramelized and glazed that its like they've been cooking in brown sugar (which wouldn't be all bad:)). You can check on them during the cooking to get them to the level you prefer, but I like when the bottoms are really dark and cooked. Makes them chewy and rich on the bottoms, and so incredibly soft and sweet on the top. silky smooth sweet perfection. yummy! 
Jamie's Sticky Saucepan Carrots
Ingredients: 
- approx 2 pounds large carrots, peeled
- A large knob of butter (about 2 tablespoons)
- 3 to 4 bay leaves,
- Sea salt
- Freshly ground black pepper
- Water
Directions:
1. Choose a medium sized saucepan. Cut the carrots crosswise into 2 1/4-inch lengths and into your pan with the carrots fitting snugly when stood up side by side(I just keep cutting carrots till its full). Add enough water to come halfway up the carrots, place the knob of butter on top of the carrots, tuck the bay leaves between them and season well with salt and pepper. Place the pan over medium-high heat and bring to a boil, then reduce the heat to medium-low, cover and cook for about 20 minutes or until the carrots are tender all the way through.
2. Uncover and cook for another 15 to 30 minutes to reduce the remaining liquid. Let the carrots sizzle gently in the butter for about 5 minutes, until the bottoms of the carrots are sticky-brown and nicely glazed on the bottom. Watch closely to prevent burning. Discard the bay leaves. Carefully transfer the carrots so the browned ends are turned upward. best warm, but serve at your leisure! 
Best cooked carrots ever. Funny I know, but i've been obsessed with these things for years, and especially lately and couldn't wait to share them a minute longer! haha
