Mixed Berry Brownie Bars

Afternoon guys! holy delisioucness, I'm so excited about sharing this recipe and may I just say before anything else, that I ate almost three of these before I could even stop to take pictures.haha aaaand I may be eating another right now... Moving on! I've been thinking about this treat for a while, and wanted to save it to make and post this week since its so beautifully festive-ly red white and blue, and here it is!
Its kind of a given that chocolate brownies, some smooth and sweet cream cheese topping and fresh blueberries and strawberries are going to go great together, but I really wasn't expecting these to be as awesome as it turned out! The key is cooking the brownies thinner and longer than they suggest which leaves them with a slight crunch on the outside while staying incredibly fudgey and chewy inside. Also the subtle sweetness of the cream cheese topping marrys perfectly with the crisp and tart berries, making it such an amazing combination of rich textures and flavors. Perfect for an outside picnic or gathering, and perfect for my tummy. Easy to make and so yummy, I can't wait for you to try these! They'll be such a hit I promise you:)
Mixed Berry Brownie Bars
Ingredients: 
- 1 milk chocolate brownie mix(and needed ingredients)
- 2 cups fresh blueberries
- 2 cups cubed fresh strawberries (about 7-8 large)
Icing:
- 8 oz cream cheese
- 2 1/2-3 cups powdered sugar
- 3 tbsp butter
- 1 tsp vanilla
- dash salt
Method:
Step #1: Start by combining all the ingredients together for your brownie mix (or favorite brownie recipe) and bake in an 11x15 (pan if you have it, if not use a 9x13 and hold back 1/4 of the batter) for the allotted time on the box for a 9x13. Once the timer goes off, gently pat down the bubbles to flatten the surface(will also help with the fudgey texture). 
Step #2: Mix up all the ingredients for the topping and spread evenly over the cooled brownies. Chop up your strawberries and alternate them with the blueberries, spreading them evenly over the top of the cream. Sprinkle a bit of powdered sugar over the top, cover, and store in the fridge to chill and set for at least an hour, and enjoy! 
I'll say that I ate one of them immediately after making them and they're still great, just can be kind of messy because of the soft cream. I also think that if you had a lunch or something you wanted to use them for, you could probably store them in the fridge overnight before they started to wilt a bit:) 

I hope you make these, even if its not for a party this week because they're great for any summer picnic or party, and in my opinion this type of dessert is great for any season! I also hope that you have a great Tuesday, and see you tomorrow!
