Almond flavor is what makes so many sweet dishes really bang. Poppy-seed muffins, various cookies, sauces, fillings, etc. and we wanted to take the essence of it to the next level by making this cake really heavy on the almond.
Think rich, sweet almond cake with crunchy toasted almond topping. Mmm:) This is a great alternative as a kind of coffee cake. You could also drizzle icing over the top to up the sweet factor, or serve it à la mode. At any rate, here's the recipe!!
ALMOND CAKE
1 White Box Cake (and ingredients called for)
Milk
1 Cup Ground Almonds*
3 Tablespoons Almond Oil
1 Tablespoon Almond Extract
ALMOND CRUMBLE
1 Cube Butter (room temperature)
1 Cup Ground Almonds*
1 Cup Slivered Almonds
½ Cup White Flour
¼ Cup Brown Sugar
Method:
Prepare a white box cake batter to specifications while replacing milk for water, increasing eggs called for by two, and adding in ground almonds, almond oil, and almond extract. Pour into baking pan (I prefer a spring form). Prepare crumble until loosely mixed. Scatter across top of cake batter by hand. Bake as specified on box. Check with your toothpick, you will probably add some minutes onto your normal bake time due to the crumble.
Serve hot right from the oven, and Enjoy!
*NOTE: Slivered almonds are a lot easier to grind up than are whole almonds . Use food processor pulse only until ground slightly course. Over processing will produce almond butter (which in this case is not what we're going for at all).

Oh wow that really does look amazing. In your notes you've suggested to sliver almonds through the food processor. I've never thought of doing that and I always have to go out and buy pre-slivered ones. I'm going to try that out next time.
