Em's Pesto Toasties

These are so yummy! I know that's a funny way to start a post, but this is a recipe post, and these are a favorite around here for lunch. Martin and I love using different flavors of pesto and are always amazed by the difference in the taste! Every single time however they come out delicious, and we find ourselves wondering why we took so long to make them again!
The mozzarella cheese is soft and chewy, while the cream cheese melts in your mouth, and the crisp outside bread mixed with the soft gooey inside and the texture of the warm ripe tomato... oh man, its yummy folks! Give these babies a try, and I'm telling you you'll just love 'em!  
Em's Pesto Toasties
Ingredients:

  • Bread 
  • Cream cheese
  • Mozzarella cheese
  • Tomatoes
  • Pesto sauce
  • salt and pepper
  • Sandwich maker
Note: For this recipe Martin and I like to use the pesto's by Pemberton's Savory Sauces, but any old favorite pesto will certainly do:) Also we use a sandwich maker (that doubles as a waffle iron:)) but you could probably use a George Foreman or something, though you just wanna make sure the edges are sealed together and the outside gets crispy! 

Method:
Step #1: Lay two pieces of bread and spread a couple tabs of cream cheese on both sides. Top with a handful of mozzarella cheese.
Step #2: Spoon on your desired amount of pesto sauce onto one side of your sandwich (I probably use about 3-5 spoonfuls) and spread evenly over your cheese. Add enough slices of tomato to the other piece of bread to cover the cheese, and carefully combine both halves to make a whole!
Step #3: Carefully place your sandwiches on the hot grills of your maker (coated with a little olive oil if that's what your device calls for:)) and press closed till it locks in place! Once your time is up, gently open your grill to behold the tastiest looking crispy sandwich ever. Yummy.
