Oven Roasted Rosemary Reds

Hey everyone! I'm in a big rush today, but I just had to get this recipe posted for you right now! This is my new favorite way of eating red potatoes, and I can't wait till we get another fresh btch of new reds from the fields! I made these for a BBQ the other night, and after I finished my serving of these (in like 5 seconds) I 'helped' Ellie finish her portion, and even started sneaking them off Martin's plate! Seriously addicting. Take a look!
I guess they're basically like hashbrown potatos, if that helps you picture the consistency more easily. Just imagine crisp and super flavorful on the outside, with moist soft buttery potato inside and you're on the right track. The perfect side for any outdoor picnic or meal, and will go well with steak and green beans during the winter! Seriously so good, and really easy to throw together! This may be the only way I cook red potatoes again. No lie. here we go:

Oven Roasted Rosemary Reds
Ingredients:
- 1 1/2 lbs red potatoes
- olive oil
Mix in Morter and Pestle:
- 1 heaping teaspoon rosemary
- 1/2 teaspoon rosemary powder (optional)
- 1 teaspoon garlic powder
- 1/2 teaspoon fresh sea salt
- 1/2 teaspoon fresh ground black pepper
Method:
Step #1: Preheat oven to 415 degrees. Stir and grind spices together in mortar and pestle till mostly powdered and mixed well (for about 30 seconds). Chop up the potatoes into bite sized cubes. Pour approx 1/8-1/4 of Olive oil in a bowl over the potatoes and stir to coat well. next sprinkle the spice blend evenly over the potatoes and stir again to coat each potato. Pour the potatoes onto a baking sheet and bake on the middle rack for 15 minutes. Stir and flip them a bit on the tray (don't worry if not all flipped) and cook for 15 minutes more. Season a bit more with salt if desired, and serve immediately!
And that's all folks! Next time I make these(which will probably be tonight or tomorrow), I'll be sure and make a double batch, just for me! haha Seriously give these a try, and then come back and tell me how you love them:)
See you tomorrow for somethin kinda big and fun!
xo, Emily

  1. I love adding rosemary to potatoes or parsnips - the flavors just go so well together with the starchiness of them.

  8. I ended up using your recipe, but frying them in a pan. My daughter gobbled hers up, and she never likes potatoes made in this style!
