Ellie's Easy Rainbow-Burst Cupcakes

Hello all you beautiful people! Things have been a little hectic here lately, but I seem to have fit more fun things into this last busy week then I have in a long time. Things that haven't really been done lately! A date or two with my Mr., some girl time with my best friend ever, walks, rest, and some cooking time just Ellie and me:)
Today we made cupcakes! Don't they just make you smile to look at them?
Ellie has been obsessed with colors lately, and usually everything has a color before its title. For instance her shoes are not just shoes, they're her 'purple' shoes, and trees are 'green' trees, and so on. Here is a simple treat that was actually way more fun to make then I thought they would be, brought to you by the color queen herself.haha
Ellie's Rainbow-Burst Cupcakes
Ingredients:
  • 1 boxed white cake mix (and the cake ingredients)
  • Gel or drop food coloring
For the Icing:
  • 1/3 cup butter, softened
  • 2-3 tbsp milk
  • 1 tsp vanilla extract
  • 3 1/2 cups confectioners’ sugar
Method:
Step 1. Mix together your cake ingredients and use a ladle or spoon to divide the batter evenly into as many bowls as you have colors. I used five for red, orange, yellow, green, and blue. Be sure and make the colors a bold as possible for the best effect.
Step 2. Add your (clear to show off the colors) cupcake liners to your pan, and begin adding your batter to each cupcake liner starting with the blue. I nudge the batter a little to the edges, but be careful not to mix the batters together. Also remember to only ad a small spoonful to each, or they'll get too big!
Step 3. Bake up your cupcakes according to the directions on the box(not too long), and let them cool completely before you pipe the icing on them. Feel free to enjoy a naked cupcake or two in the process however. Also the extra batter is up for grabs.haha 
There you have it! Recipes really don't get much easier then that:)
Now get your little ones together and have some fun! If you choose to use your own favorite cake recipe that's perfectly okay, I'm just all about the quick and easy. Also when you coupon and have a million free cake mixes sitting on your shelf, you'll think up fun ways to use them:)
Use this with any colors from a themed event or holiday! Red and pink for valentines day, black and orange for Halloween, you get the picture:) I haven't seen Ellie get more excited about a dessert, so I know these will be made around here a lot more often.
