Em's Crunchy Granola

Hey there:) Today I'm so excited to share our granola recipe with you! The extra nuts and crunch really make this the best granola I've ever had, and I'm anxious to hear what you think of it!  So lets have a look:
I love the flavor of sweet roasted crunchy oats!  Don't nuts just taste better too when they are toasted (and sweetened).  We received some company over the last time I made this and everyone kept asking about the wonderful aroma.  Something about hazelnut and almond oil baking in the oven is magical.   
Some days I'm an over-achiever and I set out with a super long lists of to-dos.  Granola is an excellent standby food item.  Eat it plain, add milk for a cereal, top it on some yogurt, ice cream, you name it.  
Em’s Crunchy Granola
10 cups rolled oats
1 ¼ cup shredded coconut
1 cup slivered almonds
1 cup sunflower seeds
½ cup finely chopped walnuts
½ cup finely chopped macadamia nuts
1/3 cup chopped pine nuts
¼ cup ground flax seed
¾ cup wheat germ 
1 Tbsp cinnamon
1 Tsp nutmeg

1 ½ cup brown sugar
½ cup veggie oil
½ cup honey (preferably organic)
1/3 cup molasses (if you can get the lid off)
¼ cup roasted almond oil
¼ cup hazelnut oil
1 Tbsp vanilla extract
1 tsp almond extract

Method:
Step 1. Preheat the oven to 350 degrees Fahrenheit.  Combine first section of ingredients into a large mixing bowl and stir well to combine. 
Step 2. Add the second section of ingredients to a saucepan and stir on a low simmer till sugar is melted. Be careful not to boil!
Step 3. Pour your hot wet mixture over your dry ingredients and stir till combined well. All the dry oats should be gone.
Step 4. Spread evenly into two 9x13 pans and bake for 1 hour, taking out to stir occasionally. Once time is up you may choose to leave in for an extra 15-30 minutes or so for extra crunch. Be sure and give it a little taste here and there towards the end to get it just how you like:) Keep in mind that it will get more crunchy once it cools and hardens.
Step 5. Once cooled completely, store in an airtight container in a cool dry place for up to a 3 weeks(if it lasts that long:)).
{Note: This recipe can be tweaked a myriad of different ways.  Add some of your favorite dried fruit (cranberries,figs,dates,currents,etc.) I love my granola straight up. mmm}
Granola is a great summer treat.  I keep it in a large jar on our counter and it doesn’t last long at all. I can’t walk by without grabbing a handful. It is too good to pass up!
When I'm looking for something a little more refreshing, a parfait is a great way to go and so much nicer than the fast food equivalent.  To make my parfait I simply layer in homemade or greek yogurt, fresh berries, and granola.  Mmmm....

  5. Mmmm. This is Aunt Carolyn's granola recipe, the one we grew up with, right? I love it. I leave the vegetable and other oils out completely though and use coconut oil instead these days. Much healthier, and easy to use...plus it plays up the coconut flavor a bit more which I love. OR Milo's favorite version is to leave the oil out completely and switch in butter instead, and triple the cinnamon. That's our Cinnamon Toast version. Evil and delish.

    Firstly, I'm in absolute aw of you! Your beautiful spirit, your courage, your positivity and strength and your gentle mothering!!!
    I happened to accidentally stumble across you on you tube. I was looking for cute hair styles to try play with. I won't lie... I was mesmerized by your beauty and humbleness that I started watching another, then another until I googled "who is the frecked fox?"
    Well let's just say I felt I experienced every emotion possible in one night!!!
    I ended up saying awake until 4am!!! I cried... actually I sobbed!, I smiled, I laughed, I even started singing along to a so g you and your beautfamiky were singing to whole you were making egg in hole!
    I simply cannot comprehend what you have been through..... and managed to come out the other end. I feel like I've been living under a mushroom!!! I actually live in Australia.

    I'm writing a novel and getting off track! This will never probably reach you but can I just say your honestly, humbleness, beauty and strength have helped me in ways I can't even explain.
