Quick Recipe: Caramel Cashew Brittle

Hey guys! I shared this favorite recipe over on Instagram because it's been such a big hit lately, and because it's so easy fast and easy to make! So many of the guys over there loved it, so I thought I'd share it here as well because you need this in your life! Here's the IG post, emojis and all.haha
Meanwhile while everyone else is posting healthy things... 😂 This stuff has been a guilty pleasure since my mom made my birthday cake out of it in high school. Sometimes I bag it up and share with friends, sometimes I eat the whole pan. 😁👌🙈 Make it, love it.

Caramel Cashew Brittle
- 2 packs of graham crackers
- 1 cup butter
- 1 cup dark brown sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 2/3 cups chopped cashews, pecans, or walnuts.

Preheat oven to 350°. Spread the graham crackers out on a baking pan (with edges) tightly, filling the pan as best as you can. Heat up the bitter and sugar on medium and boil for two minutes. Remove from heat and stir in vanilla and salt. Pour evenly over crackers, sprinkle with  nuts, and cook for approx. 15 minutes. And that's it! A bunch of my girls were saying how they've done this with saltines (which sounds awesome), and also that they put a layer of chocolate or peanut butter on top and swirled it in? Um yes please?! So, if you've given that a try before or have any other suggestions for fun twists on this, we'd all love to hear them!

Also, I promise I have a bunch of healthier recipes and fitness junk coming to the blog soon, after I finish off this last batch.haha
