Perfect Peanut Butter Chocolate Chip Cookies

Hey my peoples, happy Sunday! and happy June sheesh. This recipe is both extremely relieving to post, and extremely hard! Relieving because every time I post pictures of my making them on Instagram (which is often I admit) or talk about my favorite cookies in the world you guys really want me to share the recipe! And hard, because I have to talk about how awesome these are and then try really hard to not go make them again, because I have twice already this past week... no judging! Take a look:
Gee what can I not say about how awesome this cookie is... Let me put it this way, if you like your cookies hard, crunchy, bland, or crumbly than be warned this is not the cookie for you. However, if you love moist, chewy, light, fudgy, and flaky ones, then you've found the last recipe like this you will ever need or want. 
Just a little back-round: My gorgeous and thoughtful friend Shannon made these for me early on in my pregnancy when I was having a hard day and brought them to my house. Shortly after I had a craving for some, and since she was on vacation I looked up recipes on pinterest, made three different version, and was so utterly dissatisfied!! I was promised the 'worlds best cookie' etc but none were going to be as heavenly as the ones she'd made me. Fast forward and these are still my most favorite cookie in the world, I'll never ever look for another recipe for peanut butter chocolate chip cookies again, and you won't either once you give them a try so get to it!

Prefect Peanut Butter Chocolate Chip Cookies

(or, Emily's Favorite Cookies:))
Ingredients:
- 1/3 cup peanut butter
- 1/2 cup butter softened
- 1/2 cup white sugar
- 1/2 cup packed dark brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 egg
- 1 teaspoon vanilla

- 1 1/4 cups flour
- 1/3-1 cup chocolate chips
Method:

Preheat the oven to 375 degrees. In a medium mixing bowl blend peanut butter and butter together on high till they're well blended and smooth. Add in sugars, baking soda and powder and beat until just combined. Next beat in the egg, vanilla, and than add in the flour a little at a time till it is all mixed well, remembering to scrape the sides of the bowl. Gently and slowly beat in as many chocolate chip as you desire. I tend to keep them on the scant side because I love the peanut butter with just a bit of chocolate in every bite, but not overwhelming the flavor of the peanut butter...that's just me:)
Shape dough into medium-small balls (or use a teaspoon or medium ice-cream scoop like Shannon and I like to do), and place them about 2 inches away from each other on your greased baking sheet. Bake for 7-9 minutes, or till you can see slight golden browning on the edges. Transfer to a wire rack to keep the bottoms from cooking and to cool. 
Don't feel any need to wait to pour yourself a big glass of milk (a definite necessity) and select two or three to enjoy immediately,.. or the whole pan. I won't tell.

These cookies are so perfect. Chocolate and peanut butter? I mean come on. Make them, love them,and  please come back to tell me how they made you close your eyes and sigh whenever you take a bite:)

    First of all, thank you for answering my comment about the "heavenly maple nut bars" ! I still haven't made them but they're on my list !
    I did make these amazing cookies though !
    I'm an english teacher and I did an american cooking class the other day, thanks to you, it was a big success ! Peanut butter is not popular in France, and it's hard to find when you live in the country so my students were very excited to taste it for the 1st time ! And they loved the cookies.
    I brought some home for the kids to try and 2 out of 4 loved them, which is also quite a succes since they're such picky eaters !
