Fresh Spring Salad

I'm so excited about sharing this recipe today! We've had really warm weather recently, and I keep finding myself craving spring and summer foods made almost completely of cool, crisp fresh fruits and veggies. If you've been craving anything like that then this is the perfect light salad for you!
The apples and radishes are crisp, the goat cheese is creamy, and the crunchy sweet nutty topping all on a soft cold bed of arugula is enough to make you close your eyes with every bite. So refreshing and light, I may just use this as a first course or apitizer for every yard party for the rest of the summer. Love it!
Fresh Spring Salad
Salad Ingredients:
- 4 cups baby arugula
- 4 oz goat cheese
- ½ cup diced spring onion
- ½ cup diced apple
- ¼ cup sliced raddish
- Balsalmic vinegar
- Olive oil
- Pinch of salt

For candied pistachio crumbles:
- 1 cup shelled pistaschios
- ½ cup brown sugar
- ½ white sugar
- 1 tbsp butter

Method: 
To prepare pistachios, add all four ingredients together in a medium saucepan on med/high. Continue stirring till sugar is wet and coating the nuts. Remove from heat and allow to cool completely before crunching up into bits (we used a large mortal and pestle).
To make salad, toss all the fresh ingredients together in a medium salad bowl. Top with crumbled goat cheese. Immediately before serving, dress as desired with balsamic vinegar, olive oil, and sprinkle lightly with salt to taste. Top with some of the candied pistachios and enjoy!
